At the heart of the 16 Caroline Hospitality Group is a cooking philosophy rooted in place, tradition, and the memories that food creates.

As Chef of 16 Caroline Hospitality Group, I bring a culinary perspective shaped by two very different places that have influenced me deeply: the Northeast and the Carolinas. My time in the Carolinas played a defining role in the way I understand food — from the importance of seasonality and local ingredients to the balance of smoke, acid, spice, sweetness, and heat that defines Southern cooking.

The Carolinas taught me that great food doesn’t have to be complicated to be memorable. A perfectly cooked piece of fish, a tomato at the height of summer, Carolina Gold rice, heirloom corn, benne seeds, seafood pulled from coastal waters, or a well-made sauce can tell the story of where you are and where you’ve been.

That influence continues to shape my cooking today.

My style is modern American at its core, with a strong Carolina and coastal Southern influence woven throughout. I enjoy taking familiar flavors and traditions and presenting them in a more refined, contemporary way — respecting the ingredient and its history while giving it a new perspective.

At 16 Caroline, that philosophy meets the character of Saratoga Springs. The cooking draws from the farms, seasons, history, and culture of Upstate New York while incorporating the flavors and techniques that have become part of my culinary identity through my time in the Carolinas.

The result is food that is approachable but thoughtful, polished without being pretentious, and rooted in tradition without being bound by it.

For me, cooking is ultimately about connection — connecting people to a place, connecting the past to the present, and creating food that people remember long after the plate is gone.
